- 3 tablespoons plain yogurt or Mexican crema
- 1 tablespoon mayonnaise
- ¾ teaspoon chaat masala
- ½ teaspoon Kashmiri chile powder
- 1 pinch amchur (dried mango powder)
- ⅓ cup crumbled cotija or firm paneer
- 2 tablespoons chopped cilantro
- 1 lime, cut into wedges
- Kala namak (black salt), optional, to finish

Build it in layers.
- Heat the cooking surfacePreheat a grill or dry cast-iron skillet over medium-high heat.
- Char the cornAdd the corn and turn it regularly until the kernels are tender and browned or blistered in scattered patches. Move it away from flare-ups so the surface does not burn throughout.
- Mix the creamy layerStir the yogurt or crema and mayonnaise together in a small bowl.
- Mix the spicesCombine the chaat masala, Kashmiri chile powder, and amchur in a second small bowl. Keep the optional kala namak separate so it can be added sparingly at the end.
- Prepare the cheeseCrumble the cotija. If using paneer, crumble it and brown it lightly in a skillet, then remove it from the heat.
- Dress and finishSpread the creamy mixture over the hot corn. Dust with the spice mixture, then add the cotija or paneer, cilantro, lime, and an optional small pinch of kala namak. Serve immediately.
